Easy Banana Bread

How in the world did I miss putting THIS recipe up here? It's been "my" banana bread ever since I stole the recipe from Marcia (my roommate) in like 1998... It's super easy, and tastes AMAZING!

Easy Banana Bread

1/3 cup shortening
1/2 cup sugar
2 eggs
1-3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe bananas

In a large mixing bowl, cream shortening and sugar. Add eggs; mix well.
In a medium bowl combine flour, baking powder, baking soda and salt; Add to creamed mixture alternately with bananas, beating well after each addition. Pour into a greased 8in x 4in x 2in loaf pan. Bake at 350 for 50-55 minutes or until a toothpick inserted near the center comes out clean.

Makes 1 loaf.

Coconut Banana Muffins

Coconut Banana Muffins

These make a great breakfast or after-school snack and are a great way to use up those bananas that have gotten a bit too ripe. Remember, if you have overripe bananas and don't have time to bake, you can just pop them in the freezer, skins on or off. If you take the skins off, just freeze them in groups of three so you can easily pull out what you need for one batch of muffins.

1/2 cup butter
2 eggs
3 very ripe bananas, mashed together
1 tsp vanilla
2 cups flour (up to 1/2 cup whole wheat flour)
1 tsp salt
1 1/2 tsp baking powder
3/4 cup sugar
1/2 cup chopped walnuts
1/2 cup grated coconut

Cream together the butter and eggs, then mix in the ripe bananas and vanilla.

In a small bowl, mix the flour, salt, baking powder, and sugar together, then add to the wet ingredients and mix just until all is moistened. Add the walnuts and coconut.

Spoon the batter into muffin tins and bake at 350 for 30 minutes or so, until done.

Banana Cake

I was cleaning out my church bag, and I found a newsletter from the Buffalo Ward, from October '07, and there's a recipe that I wanted to put here.

Briste's Banana Cake

1 Yellow Cke Mix
1/3 c. Oil
1/2 tsp. baking soda
1 c. buttermilk (instead of water)
3 ripe bananas (mashed)
3 eggs

Bake @ 325F for 30 minutes or a little longer. Test cake

Frosting:
1 stick of butter
1 lb. Powdered Sugar
1 tsp. vanilla extract
Continue adding cool whip to this mixture until fluffy (min. one tub)
